Singson people in India are popularly tagged with a specially fermented meat called Sa-thu.A popular song mentions " Singson sathu du." meaning Singson who savor Sa-thu.
How to make Sathu? we have the procedures. This dish is prepared mostly from Pig and Cow fats that are collected from the Pig's or Cow's abdomen and chopped into pieces, fried and placed in Sa-um bel ( a Special container made from the dried bottleguard. see picture)
The Sa-um bel/ Sathu bel is then placed over fireplace for three days and more and then the fermented fat is used as a flavouring ingredient for other dishes.
